IHOP is bringing back Stuffed French Toast after six years, and the chain’s president says it was popular demand that brought the item back. The breakfast staple vanished from menus in 2020, replaced by newer options like the Thick ‘N Fluffy French Toast. Now it’s returning as its own menu category, with two options starting Sept. 14.

Kim’s Guest Survey

IHOP President Lawrence Kim told Nation’s Restaurant News that the decision came from a simple habit he developed while traveling. “Every time I’m in a restaurant, I ask our guests and our cooks, ‘What’s the one product you would want to bring back?’ Resoundingly, the answer is always Stuffed French Toast,” he said.

The item was first introduced in 2003, and it became a fan favorite over the years. Its absence from menus since 2020 left a gap that customers kept asking to fill. Kim said the request showed up on social media too. “As we started looking at what could be the launch product of this fall, there was no question that we should look at Stuffed French Toast, which is also the number one requested item on social media.”

The New Recipe

The comeback comes with an updated formula. The breakfast entrée features two French toast triangles filled with sweet cream, dipped and griddled in a vanilla-cinnamon batter, and topped with either glazed strawberries or blueberries and vanilla sauce. The new recipe includes more cream filling than its predecessor, a change made in response to guest suggestions.

Kim described the evolution as a modest but meaningful one. “The essence of Stuffed French Toast is the same, but it’s bigger and better,” he said. He recalled a specific comment that shaped the direction of the project. “As we were developing it, one past comment stood out: ‘I want more cream filling.'”

The Injection Process

The bigger portion didn’t come easily. Kim said he challenged IHOP’s corporate chefs to add more sweet cream filling without “making the product explode.” The solution required a new approach to how the filling gets into the bread.

“We worked with the supplier and actually created a new proprietary injection process to get more cream into the Stuffed French Toast,” Kim added. “We now like to say, ‘From corner to corner, it is filled with sweet cream.'”

The phrase “corner to corner” is the brand’s way of promising that the filling runs through the entire triangle, not just a center pocket.

The Marketing Push

The return of Stuffed French Toast lands alongside IHOP’s new advertising campaign, “Fancy a French Toast?” The campaign sets a scene of playful extravagance, complete with lavish Rococo-era art. The music comes from Katseye, whose viral hit “Pinky Up” provides the soundtrack.

The marketing message emphasizes the contrast between the meal and its price. “Stuffed French Toast is the fancier version of French Toast, and it makes you want to put your pinky up,” Kim said. “When we’re thinking about new audiences like Gen Z and young families, it’s a song that anyone can relate to. And being fancy without the compromise is part of that pinky-up anthem.”

The Two Options

IHOP is launching the comeback with two flavors:

Flavor Topping
Strawberry Vanilla Glazed strawberries
Blueberry Vanilla Blueberries

Both options share the same core components: the two French toast triangles, the vanilla-cinnamon batter, and the vanilla sauce. The fruit topping is the only difference between the two versions.

The Timing

Stuffed French Toast disappears from menus in 2020. The Thick ‘N Fluffy French Toast took its place as the newer option.

Now the original is back, and it arrives with a fresh identity. Kim framed the return as a direct response to what customers wanted, not a corporate decision.

Why This Matters

The comeback fits a larger trend in the restaurant industry. The Technomic Top 500 found that chain restaurant sales slowed again in 2025 as consumers cut back on dining. Sectors like coffee, beverages and snacks, and chicken thrived despite the overall decline.

IHOP’s move leans into nostalgia and indulgence at a moment when casual dining is under pressure.

What We Make Of It

The comeback feels like a direct response to what customers wanted. Kim’s admission that he hears about Stuffed French Toast everywhere he eats — from guests, cooks, and social media — is the kind of detail that makes the rollout feel authentic.

The injection process story shows that customer requests can lead to genuine innovation, even on a breakfast menu. The campaign’s Rococo-era visuals and the “Pinky Up” soundtrack lean into the fancy-without-the-compromise pitch.

The return of Stuffed French Toast is a small win for IHOP. It gives the chain a new talking point, a reason to visit, and a chance to remind customers why they loved the item in the first place. Whether it moves the needle on sales is another question entirely.

For now, the Stuffed French Toast is back, and it’s bigger than before.
